Chocolate Muffins

oz plain chocolate
Pinch of salt
5 oz self raising flour
2 oz soft dark brown sugar
1/2 tsp baking powder
4 oz milk
1 egg
1 oz butter
2 oz chocolate chips
Sift flour, baking powder and salt into a bowl, melt
chocolate, mix with sugar and milk, melted butter and
beaten egg. Fold into flour mix. Stir in chocolate chips.
The mixture will appear lumpy. This is correct! Do not
beat. Spoon mixture into muffin cases. Bake for 20-25
minutes at 2000 gas 5 until well risen and firm to touch.
